The fruit was lightly pressed and cold settled for two days. After a clean racking off the gross lees the juice was inoculated with EC1118 yeast. Fermentation lasted fifteen days at which point it was stopped to maintain a hint of residual sugar. Additionally, malolactic fermentation was prohibited. Light straw in color, with aromas of fragrant nectarine, elder flower, and Honey Dew melon, this Riesling is a show stopper. Juicy white peach greets one on the first sip, followed by spicy ground ginger, and ripe Meyer lemon. 0.05% residual sugar adds length to the fruit on the palate balanced by substantial acidity. The wine finishes with bold key lime and luscious honey. Drink between now and 2018.
